Komatsuuna, or Japanese spinach mustard, is a nutritious and beautiful leafy vegetable.It has probably been grown in Japan for ages.With its long curved leaves, the komatsuna looks very nice, especially at an early stage (and who doesn't?).It is hardy and grows quickly.It has a nice structure and a fresh vegetable taste with a hint of mustard.Komatsuuna is also a good source of calcium.You can do anything with komatsuna, it just depends on your imagination.Use it instead of cabbage or spinach.Mix a handful of young leaves in a salad.You can finely chop the largest leaves and add them to the soup or ragout or to the pasta after frying in a pan or stewing.
